Green Bean Nicoise

Ingredients

  • 2 1/4 cups green beans
  • 1/4 cup kidney beans
  • 1 tomato quartered
  • 1 1/3 teaspoons olive oil
  • 1 teaspoon cider vinegar
  • 1 teaspoon soy sauce
  • 1 clove garlic chopped
  • Salt & pepper
  • 2 ounces feta cheese crumbled
  • 2 ounces soy cheese crumbled

Directions

  1. In a glass bowl, microwave green beans on high until desired firmness (about 8-12 min). When done, plunge in ice-cold water to cool. Drain and place in med-size bowl.

  2. Add kidney beans and quartered tomatoes. Set aside

  3. Combine oil, cider vinegar, soy sauce, garlic, salt & pepper. Toss beans and toms w/mixture.

  4. On a med-size plate, arrange the beans and toms. Sprinkle with feta and soy chesses. Serve chilled.
