Cream Wafers

Ingredients

  • Cookies:
  • 1 c. butter or margarine
  • 1/3 c. whipping cream
  • 2 c. flour
  • Granulated sugar
  • Filling:
  • 1/4 c. butter, softened
  • 3/4 c. powdered sugar, sifted
  • 1 t. vanilla

Directions

  1. Mix butter, cream, and flour thoroughly.

  2. Chill for 1 hour.

  3. Heat oven to 375 degrees.

  4. Roll dough to 1/8 in. thick on lightly floured board.

  5. Cut into 1 1/2 in. rounds.

  6. Transfer to waxed paper heavily sprinkled with sugar, turning to coat both sides.

  7. Place on ungreased baking sheet.

  8. Prick in 4 places with fork.

  9. Bake 7 to 9 minutes, or until slightly puffy.

  10. Cool completely.

  11. Meanwhile, blend to combine all filling ingredients.

  12. Put two cooled cookies together will filling in the middle.

  13. Makes approximately 5 dozen.
