Stuffed Feta-Veal Burgers

Ingredients

  • 1 1/4 pound lean ground veal
  • 2 cloves garlic, minced
  • 1/3 cup crumbled feta cheese
  • 3 tablespoons chopped fresh parsley
  • 3 tablespoons chopped fresh mint
  • 1 cup plain yogurt
  • 2 tablespoons finely chopped cucumber
  • 1 tablespoons finely minced red onion
  • 4 6 inch pitas or hamburger buns
  • Lettuce
  • red onion
  • tomato slices

Directions

  1. Combine veal, feta, garlic, parsley, mint, and salt and pepper to taste in large bowl.

  2. Form into 4 4 inch patties, about 1/2 inch thick.

  3. Chill at least 30 minutes.

  4. Meanwhile for sauce, combine yogurt, cucumber, red onion, and salt and pepper to taste in small bowl.

  5. Cover and chill.

  6. Coat grill rack with nonstick cooking spray.

  7. Preheat grill to medium-high.

  8. Grill burgers 5 minutes on each side or to desired doneness.

  9. Place in pita bread or bun, and top with yogurt sauce.

  10. Add lettuce, onion, and tomato slices, if desired.
