Late-Summer Vegetable Soup

Ingredients

  • 4 ears corn
  • 2 T olive oil
  • 1 large onion
  • salt and pepper
  • 4 c vegetable broth
  • 2 large zucchini, halved and thinly sliced
  • 8 oz green beans, trimmed and cut
  • 1 14oz can diced tomatoes
  • 1/2 c orzo

Directions

  1. Cut kernels off corn. Heat oil in pot and cook onion 5 minutes until soft. Add broth and 2 c water and bring to a boil. Add zucchini, green beans, corn, tomatoes, and orzo. Cook uncovered until orzo is tender, 11 minutes. Season with salt and pepper.
