Broccoli Chowder with Corn and Bacon

Ingredients

  • 4 slices Smart Bacon
  • 1 large onion
  • 1/4 c all-purpose flour
  • 4 c vegetable broth
  • 1 large potato
  • 1 head broccoli
  • 10oz frozen corn kernels
  • 1/2 t dried thyme
  • 1 c soymilk
  • salt and pepper

Directions

  1. Cook bacon and set aside. Cook onion in oil until soft, 7 minutes. Add flour, cook stirring constantly 30 seconds. Add broth and potato, bring to a boil. Reduce to a simmer and cook 10 minutes until potato is tender. Add broccoli, corn, thyme, and milk; cook until broccoli is crisp-tender, 10 minutes. Season with salt and pepper. Top with bacon.
