Cashew Ricotta

Ingredients

  • 1/2 c raw cashew pieces
  • 1/4 c lemon juice
  • 2 T olive oil
  • 2 cloves garlic
  • 1 lb firm tofu
  • 1 1/2 t dried basil
  • 1 1/2 t salt

Directions

  1. Process cashews, lemon juice, olive oil, and garlic until thick and creamy. Add crumbled tofu and process until well blended. Blend in basil and salt.
