Cornbread

Ingredients

  • 2 c soymilk
  • 2 t apple cider
  • 2 c cornmeal
  • 1 c all-purpose flour
  • 1/2 c sugar
  • 2 t baking powder
  • 1/2 t salt
  • 1/3 c oil

Directions

  1. eheat oven to 350. Grease cast iron pan and place in oven to warm. Combine soymilk and vinegar, allow to curdle. Sift cornmeal, flour, sugar, baking powder, and salt. Add soymilk and oil and mix with wooden spoon until just combined. Pour into cast iron pan and bake 30 minutes until toothpick comes out clean.
