Ham & Cheddar Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 8 ounces cubed ham
  • 1 1/2 cups grated sharp cheddar cheese

Directions

  1. Preheat oven to 450 degrees. Lightly grease 12 muffin cups or line with paper liners.

  2. Mix flour, baking powder, soda, salt and pepper in a bowl.

  3. Whisk egg, buttermilk and oil in another bowl. Add dry ingredients. Stir just until blended. Stir in ham and cheese.

  4. Divide batter between prepared muffin cups. Place in oven. Reduce oven temperature to 400 degrees. Bake until golden brown, about 20 minutes.

  5. Transfer pan to rack. Cool slightly. Remove from pan. Cool completely or serve warm.
