Bean Burgers

Serves 8 people

Ingredients

  • 2 T canola oil
  • 2 large onions
  • 2 garlic cloves
  • 2 t coriander
  • 2 t cumin
  • 8 oz white mushrooms, finely chopped
  • 2 15 oz cans pinto or kidney beans (or 4 c cooked beans)
  • 4 T chopped fresh parsley
  • white flour
  • salt and pepper
  • hamburger buns

Directions

  1. Cook onion until softened, 5 minutes. Add garlic, coriander, and cumin and cook for another minute. Add mushrooms and cook 4-5 minutes, stirring, until liquid is evaporated.

  2. Mash beans in a small bowl. Stir in mushroom mixture and parsley and season with salt and pepper.

  3. Divide into 8 portions, dust with flour, and shape into patties. Brush with oil. Cook under medium-high broiler for 4-5 minutes on each side.
