Tortellini Soup

Ingredients

  • 2 T. oilve oil
  • 4 cloves of garlic, minced
  • 3 cans 14-1/2 oz. chicken broth
  • 1 pkg. 9 oz. tortellini
  • 1 can 14-1/2 oz. Italian stewed tomatoes
  • 1/2 bunch fresh spinach
  • 1 t. dried basil
  • 1/2 c. Parmesan, grated
  • salt & pepper, to taste

Directions

  1. In a large pot, saute garlic in olive oil over medium heat until golden.

  2. Stir in chicken broth and bring to a low boil.

  3. Stir in Parmesan until melted. Stir frequently so parmesan doesn’t stick to the bottom of the pot.

  4. Season with salt and pepper.

  5. Stir in tortellini, stewed tomatoes, spinach and basil.

  6. Let soup slightly boil, or simmer for about 10 min.

  7. Remove from heat when tortellini is still small and not puffy (it tastes better).
