Green Beans with Pine Nuts

Serves 8 people

Ingredients

  • 2 T olive oil
  • 1/3 c pine nuts
  • 1/2-1 t paprika
  • 1 lb green beans
  • 1 small onion
  • 1 garlic clove
  • 1 lemon
  • salt and pepper

Directions

  1. Trim beans. Bring pan of water to boil, add beans, and cook for 5 minutes. Drain well.

  2. Heat oil in large heavy skillet over medium high, and the pine nuts, and cook stirring constantly for 1 minutes until golden brown. Drain on paper towels and toss with paprika.

  3. With remaining oil on medium, add the onion and cook 8-10 minutes until soft. Add garlic and cook additional minute.

  4. Add the beans to the skillet, tossing with onion, and cook 2-3 minutes. Season with salt and pepper.

  5. Turn into serving dish. Sprinkle with lemon juice, toss, and sprinkle with pine nuts.
