Cranberry Apple Chutney

Ingredients

  • 3/4 cup unsweetened apple juice
  • 1 cup chopped sweet onion
  • 1 cup sugar substitute
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 (12-ounce) package fresh or frozen cranberries
  • 1 large Granny Smith apple, peeled, cut into 1/4-inch pieces

Directions

  1. Combine juice, onion, sugar substitute, brown sugar, cinnamon, ginger, and cloves in heavy saucepan. Bring to boil over high heat. Reduce heat and simmer uncovered for 5 minutes.

  2. Add cranberries and apple. Return to simmer and cook uncovered 20 minutes or until mixture is very thick, stirring occasionally.

  3. Let cool and serve at room temperature or chill until serving.

  4. Yield: 20 servings
