Green Beans with Roasted Red Pepper Sauce

Ingredients

  • 1 1/2 pounds green beans, trimmed
  • salt to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 1/2 cup pine nuts, toasted
  • Pepper to taste
  • Roasted Red Pepper Sauce:
  • 2 jars store bought roasted red peppers
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 teaspoons fresh lemon juice, or to taste
  • 1 1/2 teaspoons balsamic vinegar, or to taste
  • Cayenne, to taste

Directions

  1. Cook green beans in large pot of boiling salted water until crisp-tender, about 4 minutes. Drain; rinse with cold water to cool quickly and drain again.

  2. Heat oil and butter in large skillet over medium-high heat. Add garlic; sauté until fragrant, about 1 minute. Add green beans and sauté until heated through, about 5 minutes. Mix in toasted nuts; season with salt and pepper. Transfer to bowl.

  4. In blender blend together the pepper, oil, lemon juice, vinegar, cayenne, 1 tablespoon water, and salt and black pepper to taste.
