Turkey Ranchero

Ingredients

  • 1 package prepared rice (such as Uncle Ben's ready Rice)
  • 1/4 cup water
  • 1 (11 ounce) can Mexicorn
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 2 cups (10 ounces) strips of cooked turkey (or chicken)
  • 1/2 cup barbecue sauce

Directions

  1. Stir rice and water together in a covered skillet over medium-high heat.

  2. Add the canned corn and shredded cheese; heat through for 3 to 4 minutes.

  3. Top the rice with turkey and drizzle with your favorite barbecue sauce.

  4. Tip: Serve this with corn bread and premade broccoli slaw or a tossed green salad.
