My husband’s favorite meal! I often use Trader Joe’s frozen bell pepper mix in place of fresh bell peppers here and substitute a can of diced tomatoes for fresh. Serve over rice.

Ingredients

  • 1 Tbsp oil
  • 2 onions, chopped
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 1/2 teaspoon pepper
  • 1 jalapeno pepper, seeded and chopped
  • 1/2 lb chicken breasts, thighs, cubed
  • 2 green bell peppers, chopped
  • 4 tomatoes, chopped or 1 can diced tomatoes
  • 2 cups chicken broth
  • 3 Tbsp peanut butter
  • 1/2 pound fresh spinach

Directions

  1. Heat oil in a large stew pot over moderate heat; add onions, sauté until golden brown.

  2. Add garlic, salt, pepper and hot pepper. Stir-fry 2 or 3 minutes; add chicken and bell peppers.

  3. Fry stirring occasionally, until chicken browns on all sides.

  4. Mash tomatoes with a fork and mix them into the stew, along with the broth.

  5. Reduce heat, cover, and simmer 10 minutes.

  6. Add the peanut butter with a few tablespoons of hot broth from the pot.

  7. Add the peanut paste to the stew; continue simmering until chicken is well done.

  8. Wash spinach and saute or steam until tender.

  9. Serve greens with the stew.
