Chicken with Garlic Cream Sauce

Ingredients

  • olive oil
  • 3 lg cloves garlic - minced
  • 4 scallions - chopped, green parts
  • 2 1/2 cups chicken broth
  • 1 tbl parsley
  • 4 oz cream cheese
  • 4 boneless chicken breasts
  • 2 tbl flour
  • 1/2 tsp salt
  • 1/8 tsp pepper

Directions

  1. In a saucepan, heat oil; add garlic and green onions, stirring/cook for a few more minutes.

  2. Add chicken broth and bring to a boil, reduce heat and simmer for 5 min. Add cream cheese and parsley, set aside (stirring occasionally to disperse the cream cheese).

  3. You can also thicken the sauce a bit using some corn starch and water (which you do while its boiling) or add about 1/2-3/4 cup less broth.

  4. Wash/dry chicken and pound to a thin even thickness for even cooking. I let my kids do this in a ziplock baggie.

  5. Combine flour with salt/pepper.

  6. Dip chicken into the flour and set aside.

  7. Heat olive oil in a frying pan.

  8. Brown chicken breasts for exactly 3 minutes on each side (do not crowd).

  9. Add cream sauce and simmer for about 10-15 minutes until done.

  10. BTW…this recipe doubles nicely and exactly (double all ingredients) . Best served over rice with a green veggie (like peas or snap beans). :)
