Spring Rolls with Cucumber Dip

Ingredients

  • 1/3 cucumber

Directions

  1. Dip:

  2. cut cucumber into little pieces. Add 1/3 of a cup of yogurt and 1/3 cup of mayo. 1/4 tsp of chilli oil. Stir together. Add 1 tsp of fresh lemon juice. Mix together. A little Salt.

  3. Stuffing:

  4. one carrot, peel and cut into pieces – add to food processor. Two cloves of garlic into processor. One shallot, chopped into four and added to processor. Take stems out of mushrooms – assortment any mushrooms – 4-5; chop add to processor.

  5. 2 tbsp of sugar

  6. 2 tbsp of soy sauce

  7. a little salt – a pinch

  8. start processor and blend.

  9. Shrimp?? Missed one ingredient to add to processor.

  10. Make eggwash – eggroll wrappers – eggwash edges of wrapper, one tsp of mixture into wrapper.
