Cream Puffs

Serves 12 people

Ingredients

  • 1 cup water
  • 1/2 cup butter
  • Pinch Salt
  • 1 cup all-purpose flour
  • 4 eggs

Directions

  1. Preheat oven to 450 degrees. Place water and butter in a saucepan and heat to a boil.

  2. Remove from heat and add salt and flour, all at once, stirring vigorously.

  3. Add eggs, one at a time, incorporating all until smooth.

  4. Drop by spoonfuls onto a greased baking sheet. Bake 15 minutes, reduce heat to 350 degrees and bake about 15 minutes more. They are done when the fat droplets are no longer present and a toothpick inserted in puffs comes out clean.

  5. Transfer to a wire rack. Cut in half and fill as desired.
