Southern Sweet Potato Pancakes

this recipe is yummy! I mean,how many times can you have taters AND pancakes?

Serves 3 people

Ingredients

  • 2 medium sweet potatos (yams are good two!)
  • 3 tablespoons flour
  • 1 tablespoon milk
  • 2 eggs, lightly beaten
  • 1/2 tsp salt
  • 6 tablespoons shorting or cooking oil

Directions

  1. heat oven to 300 degrees.

  2. In a medium bowl, combine sweet potatos, flour, milk, eggs and salt.

  3. Take a nice cast iron skillet and heat the 1/4 cup of cooking oil.

  4. accoring to the size of the skillet, place one or more portions of batter, two heaping tablespoons each, in hot oil and press flat with spatula.

  5. cook each pancake about 5 minutes on each side until brown and crispy.

  6. add the remaining cooking oil as needed.

  7. put pancakes in bottem of oven to keep warm.

  8. enjoy!
