Butterscotch Pie

Ingredients

  • 1 cup light brown sugar
  • 1/4 cup butter, softened
  • 1/4 cup flour
  • 1 cup milk, scalded
  • 2 eggs, separated
  • 4 tbl. sugar
  • 9-inch baked pie shell

Directions

  1. Preheat oven to 350 degrees.

  2. Combine brown sugar, butter and flour in a mixing bowl and beat until creamy.

  3. Transfer mixture to a saucepan over low heat. Slowly and gradually stir in hot, scalded milk; continue cooking, stirring constantly, until mixture has thickened.

  4. Lightly beat 2 egg yolks. Blend a small amount of hot liquid into egg yolks, then blend egg yolk mixture into milk mixture. Continue to cook, stirring constantly, 3 minutes. Pour hot pie filling into prepared pie crust.

  5. Beat egg whites until frothy. Gradually add sugar and continue to beat until stiff peaks form. Spoon meringue over pie, sealing tightly at edges of crust. Bake pie about 10minutes or until golden.

  6. Chill well before serving.
