Apple Pie

(from erma’s recipe box)

Use a 9"pie pan if using 6 large baking apples

Ingredients

  • 6 - 8 peeled, cored and sliced baking apples
  • 2 T. water (skip this if the apples are sliced into a bowl of water)
  • 1 T. lemon juice
  • 1/2 c. sugar
  • 1/2 c. packed brown sugar
  • 3 T. flour
  • 1 t. cinnamon
  • 1/4 t. ground nutmeg
  • 1/8 t. ground ginger
  • 1/8 t. salt

Directions

  1. Cook sliced apples in water and lemon juice over medium/low heat until the apples are tender(they’ll be translucent).

  2. Let the apples cool; do not drain the liquid.*

  3. In a large bowl, combine the sugars and spices.

  4. Add apples* and mix well to coat the fruit. *Don’t use all of the liquid in the apples if they are soupy.

  5. Add to 9" pie pan, using both a bottom and upper unbaked crust.

  6. Seal and flute.

  7. Slit the top crust to allow steam to escape.

  8. Bake at 450 degrees for 10 minutes; reduce heat to 350 degrees and bake 35-45 more minutes, or until golden brown.
