Cornbread Chili Pie

Ingredients

  • 1 pound ground beef or pork sausage
  • 1 chopped onion
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can red kidney beans, drained and rinsed
  • 1/4 c ketchup
  • 1/4 c brown sugar
  • dash of worchestershire
  • 1/4 t pepper
  • 1 t salt
  • 1 tablespoon chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp taco seasoning
  • 1 can whole kernel corn, drained
  • 1 pkg cornbread mix
  • one egg
  • 1/3 cup milk
  • shredded cheese

Directions

  1. Saute 1 pound ground beef or pork sausage with 1 chopped onion.

  2. When browned, add diced tomatoes, black beans, red kidney beans, pepper, salt, chili powder, ketchup, brown sugar, worchestershire, cumin, paprika, taco seasoning and half the corn. Simmer 15 minutes.

  3. While the meat is cooking, mix together cornbread mix, egg, milk, shredded cheese, and the remaining corn.

  4. Put the meat/veg into a greased casserole dish, cover with the cornbread batter. The cornbread may sink into the chili: it will rise during baking. Bake in a preheated 425F oven for 25 minutes.
