Spiced lamb chops

Ingredients

  • 800 g lamb loin chops, trimmed of fat
  • 1 tablespoon olive oil
  • lemon wedges
  • 1 tablespoon freshly ground black pepper
  • 2 teaspoons whole coriander seeds
  • 1 teaspoon garam masala
  • 2 cardamom pods, crushed
  • 1 teaspoon chilli powder

Directions

  1. To make the spice crust, mix all spices well in a bowl.

  2. Coat chops with a little olive oil, then coat thoroughly in spice mixture.

  3. Cover with plastic wrap and refrigerate for 1 hour

  4. Make the ratatouille

  5. Heat oil in a trying pan over high heat and cook chops for 3 minutes each side, or until done to your liking.

  6. Divide ratatouille between plates and top with chops and a wedge of lemon.
