Ham Bread Pudding

Ingredients

  • 1 1/4 cups green onions, chopped
  • 1 cup cooked ham, chopped
  • 2 cloves garlic, minced
  • 7 Hawaiian bread rolls, cut into 1/2 inch cubes
  • 1 3/4 cups milk
  • 3/4 cup egg substitute
  • 2 tbls. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. ground nutmeg
  • 1 cup Swiss cheese, shredded

Directions

  1. Cook onions, ham and garlic for 5 minutes in a small skillet coated with non-stick cooking spray over medium-high heat, stirring as mixture cooks.

  2. Remove from heat; cool.

  3. Preheat oven to 350 degrees.

  4. Arrange cubes on a baking sheet. Bake for 15 minutes or until lightly browned, turning occasionally.

  5. Combine milk, egg substitute, mustard, salt, pepper, and nutmeg in a large bowl, stirring with a whisk until well blended.

  6. Stir in ham mixture.

  7. Add bread, tossing gently to coat.

  8. Arrange half of the bread mixture in an 8-inch square baking dish that has been coated with non-stick cooking spray.

  9. Sprinkle with half of the cheese; top with remaining bread mixture.

  10. Bake at 350 degrees for 25 minutes. Sprinkle with remaining cheese and bake an additional 20 minutes or until center is set.
