Rolled Flank Steak

Ingredients

  • 1.5 lbs Flank Steak
  • 1 T Olive Oil
  • 1 T Balsamic Vinegar
  • 2 Garlic Cloves, crushed
  • 2 oz Shredded Mozzarella (1/2 C)
  • 1/2 C Sliced Scallions
  • 1/4 C Diced Red Pepper (orig: Roasted Red Peppers, drained and cut into thin strips)
  • Coarse Salt and Ground Pepper

Directions

  1. Preheat oven to 450 with rack in center.

  2. Between two sheets of plastic wrap, pound steak into a 1/2 in thickness with a meat mallet or heavy skillet.

  3. In a large, shallow bowl, whisk together oil, vinegar, and garlic.

  4. Add steak; turn to coat. Marinate 20 minutes, reserve garlic.

  5. Spread cheese, scallions, peppers and reserved garlic on steak. Season with salt & pepper. Roll up tightly; tie with kitchen twine. Season with salt and pepper.

  6. Place, seam side down, on a rimmed baking sheet; roast until juices run clear, 35-40 minutes for medium-rare.

  7. Let rest 10 minutes; remove twine before slicing.
