Flank Steak with Lime Marinade

We actually prefer this with Lemon juice.

Serves 4 people

Ingredients

  • 1/3 C Fresh Lime Juice (about 4 limes)
  • 2 T Soy Sauce
  • 2 Scallions, thinly sliced (about 1/3 C)
  • 2 T Minced Peeled Fresh Ginger
  • 1/2 t Red Pepper Flakes
  • 1.5 Lbs Flank Steak
  • Oil (for grill)
  • Coarse Salt & Ground Pepper

Directions

  1. Combine first 6 ingredients. Marinate for 30 minutes.

  2. Heat the grill to high.

  3. Remove flank steak from the marinade (discard marinade) season with salt & pepper. Place steak on the grill; cover. Cook, turning once, 6-8 minutes for medium-rare.

  4. Let the steak rest 10 minutes before slicing thin.
