Pinwheel Flank Steak

This is super yummy. Serve with Mango salsa!

Ingredients

  • 1.5 lbs Flank Steak
  • 2 C Red Wine
  • 1/2 C Finely Chopped Green Onions
  • 2 Bay Leaves
  • 1 T Worcestershire Sauce
  • 1 Clove Garlic, crushed
  • 1 t Salt
  • 1/2 t Ground Black Pepper
  • 1/2 lb Bacon
  • 2 Cloves Garlic, minced
  • 1 t salt
  • 1/2 t Ground Black Pepper
  • 1/4 C Minced Fresh Parsley
  • 1/4 C Finely Chopped Onion

Directions

  1. Pound flank steak to 1/2 inch thickness. Combine wine, onions, bay, Worcestershire, garlic salt & pepper. Marinate meat for 3-4 hours.

  2. Remove steak from marinade and lay flat.

  3. Fry bacon until almost done but not crisp. Score steak on both sides.

  4. Sprinkle steak with garlic, salt, pepper, parsley, and onion.

  5. Place bacon lengthwise on steak.

  6. Roll up steak, starting with narrow end.

  7. ewer with wooden picks or tie with cotton string at 1.5 inch intervals. [To freeze: Place in freezer bag and pour small amount of marinade over rolled steak. Remove as much air as possible from bag.]

  8. Chill well with some of the marinade (maybe overnight?)

  9. t into 1.5 inch slices.

  10. y flat and grill over medium-high for 5.7 minutes per side or until desired doneness is achieved, turning once.

  11. Serve with Mango Salsa.
