Broccoli Meat Roll

Ingredients

  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 3/4 cup soft bread crumbs
  • 1 1/2 teaspoons salt, divided
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried oregano
  • 2 pounds lean ground beef
  • 1 package (10 ounces) frozen chopped broccoli, thawed and drained
  • 1 package (2 1/2 ounces) thinly sliced deli ham
  • 3 slices mozzarella cheese, cut in half diagonally

Directions

  1. In a large bowl, combine the eggs, milk, ketchup, bread crumbs, 1/2 teaspoon salt, pepper, and oregano.

  2. Crumble beef over mixture and mix well.

  3. On a piece of heavy duty aluminum foil, pat beef mixture into a 12 inch by 10 inch rectangle.

  4. Cover with broccoli to withing 1/2 inch of edges.

  5. Sprinkle with remaining salt.

  6. Top with ham.

  7. Roll up, jelly-roll style, starting with a short side and peeling foil away while rolling.

  8. Seal seam and ends.

  9. Place in a greased 13 inch by 9 inch by 2 inch baking dish.

  10. Bake, uncovered, at 350 degrees for 1 1/4 hours or until meat is no longer pink and a meat thermometer reads 160 degrees; drain.

  11. Top with cheese slices.

  12. Bake 1 minute longer or until the cheese is melted.
