Black Bean Soup

Serves 2 people

Ingredients

  • 2 green onions, chopped
  • 1 clove garlic, chopped
  • 2 tsp oil
  • 1 tsp fresh ginger, chopped
  • 1/2 tsp cumin seeds
  • 1/3 cup grated carrot
  • 1 15-ounce can black beans, rinsed, drained
  • 1 cup vegetable broth
  • 1 bay leaf
  • Hot sauce

Directions

  1. Combine onion, garlic, oil, ginger and cumin seeds.

  2. Microwave on medium for 1 minute.

  3. Add carrot, beans, broth, bay leaf and microwave on high for 4 minutes, stirring after 2 minutes.

  4. Remove bay leaf.

  5. Remove 1/2 cup of beans with slotted spoon; reserve.

  6. Puree till smooth.

  7. Re-add reserved beans and add hot sauce.

  8. Garnish green onion and carrot.
