Gingerbread Muffins with Applesauce

Ingredients

  • 1/2 cup shortening
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 cup molasses
  • 2 cup flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp powdered ginger
  • 1/2 cup sour milk (add lemon)
  • 1/2 tsp vanilla

Directions

  1. Cream shortening.

  2. Gradually add brown sugar.

  3. Beat in egg and molasses.

  4. Sift together flour, baking soda, cinnamon and ginger.

  5. Add sour milk into wet mixture alternatively with the dry mixture.

  6. Add vanilla.

  7. Bake 350 F for 15-20 minutes in greased or lined muffin tins.
