Herbed Meat Loaf with Mushroom Sauce

Serves 6 people

Ingredients

  • 600 g ground beef
  • 1 cup soft wholemeal bread crumbs
  • 1 green pepper, finely chopped
  • 1 onion, finely chopped
  • 1/2 tsp soy sauce
  • 1 tsp mustard
  • salt
  • 1/2 tsp dried thyme
  • 1/2 tsp marjoram
  • 1 tsp sage, dried
  • 2 eggs
  • 3 Tbsp oil
  • Mushroom sauce:
  • 8 oz sliced mushrooms
  • 1 Tbsp butter
  • 8 oz beef stock
  • S&P
  • Pinch nutmeg

Directions

  1. Mash together all ingredients except egg and oil.

  2. Bind with eggs.

  3. Refridgerate for at least 1 hour in a loaf tin moistened with oil.

  4. Turn loaf into a baking dish and pour 3 Tbsp oil over it.

  5. Bake 350 F for 1 hour.

  6. Mushroom sauce:

  7. Fry mushrooms lightly in butter.

  8. Add stock and spices.

  9. Thicken with corn starch and milk.

  10. Pour over meat loaf.
