Chicken Stew

Ingredients

  • 4-6 chicken thighes, boneless, skinless
  • 1 Tbsp olive oil
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • Handful dried shitake mushroom, soaked in warm water to soften, chopped
  • 1/2 cup white wine
  • 1/2 cup chicken stock
  • 1 clove garlic, minced
  • 1 can mushroom soup
  • 1 tsp dried thyme
  • S&P
  • Worchestshire sauce
  • 1/2 tsp dill
  • 1/2 tsp mint

Directions

  1. Brown chicken thighes with olive oil.

  2. Add celery, carrots, onion, shitake and garlic; saute to soften.

  3. Add wine and stock, cut chicken into smaller pieces.

  4. Add soup and remaining spices.

  5. Simmer 30-40 minutes.
