Fried Rice

Ingredients

  • 1/3 cup chicken stock
  • 1 Tbsp oyster sauce
  • 1 Tbsp fish sauce
  • 1 Tbsp mirin
  • 2 Tbsp soya sauce
  • 1 tsp brown sugar
  • 1 clove garlic, minced
  • 1 Tbsp oil
  • 1 Tbsp sesame oil
  • 1/2 tsp hot pepper flakes or hot sauce
  • 2 eggs, beaten
  • 1 small onion, chopped
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 1 cup snow peas
  • 3 cups cooked brown rice
  • 2 green onions, chopped

Directions

  1. Whisk together all ingredients from stock to garlic and reserve.

  2. Heat 1 tsp of oil in wok, add pepper flakes and cook for 1 minute.

  3. Add egg, tip pan to make thin omelette.

  4. Cover and cook 2 minutes until set.

  5. Using spatula, fold over and slide out of pan.

  6. Add remaining oil, stir fry onion 5 minutes.

  7. Increase heat to high, add peppers, cook 3 minutes.

  8. d peas and reserve from step 1.

  9. Boil 2 minutes until liquid is syrupy.

  10. Add rice and green onions, toss 3 minutes.

  11. Add egg.
