Pork Souvlakia

Ingredients

  • 2 lbs pork tenderloin, cut into 1" cubes
  • 6-8 whole wheat pitas
  • Marinade:
  • 1/3 cup fresh lemon juice
  • 2 Tbsp veg. oil
  • 1 Tbsp oregano
  • 1/4 tsp black pepper
  • pinch rosemary
  • 1 lrg clove garlic, minced
  • Yogurt sauce:
  • 1-1/2 cups plain yogurt
  • 1/2 cup green onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tomatoe, diced

Directions

  1. Place pork in non-metal container.

  2. Pour marinade over pork.

  3. Marinade up to 8 hours in fridge, covered.

  4. Skewer meat loosely.

  5. Place on foil and pour remaining marinade over and BBQ or cook in oven at 425 F.

  6. For last few minutes of cooking, remove from marinade and continue grilling just until juices run clear.

  7. Serve pork in pitas with yogurt sauce.
