Ginger Spice Cookies

Ingredients

  • 2 cups flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 egg
  • 3/4 cup oil
  • 1/4 cup molasses
  • 1 cup brown sugar, packed
  • 1/3 cup white sugar

Directions

  1. Arrange oven racks in top and bottom thirds of oven.

  2. Preheat to 350 F.

  3. Lightly spary two baking sheets with oil

  4. In medium bowl, using a fork, stir flour with soda, cinnamon, ginger, nutmeg and salt.

  5. In large bowl, beat egg.

  6. Beat in oil and molasses.

  7. Uisng wooden spoon, beat in brown sugar until evenly mixed.

  8. Gradually stir in flour mixture until well mixed.

  9. Place white sugar in small bowl. Pinch off about 1 Tbsp dough and roll into ball.

  10. Roll ball in sugar until evenly coated.

  11. Place on baking sheet, 2" apart.

  12. Bake on two racks, switching position halfway through baking.

  13. Bake until cookies begin to crack and set around edges, 7 to 10 minutes.

  14. Cool on rack on sheets and store in airtight container up to 5 days or freeze up to 1 month.
