Eggplant Scallop

Serves 3 people

Ingredients

  • 1 Tbsp butter
  • 1 small onion, chopped
  • 1/2 medium eggplant, peeled, cut in 1" cubes
  • 2 tomatoes, peeled and cut in 8
  • 1/2 tsp salt
  • 1-1/2 tsp brown sugar
  • Dash pepper
  • 1/4 tsp oregano
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup bread crumbs, soft
  • 1 Tbsp butter

Directions

  1. Saute onion in melted butter until transparent.

  2. Combine eggplant, tomatoe and next 4 ingredients.

  3. Place in shallow greased baking dish.

  4. Combine crumbs and cheese.

  5. Sprinkle on casserole and dot with butter.

  6. Bake at 375 F approx. 45 minutes until tender.
