French Onion Soup

Serves 6 people

Ingredients

  • 4 large onions, thinly sliced
  • 1/4 cup butter
  • 1.5 L beef stock
  • Salt, to taste
  • 1/4 tsp pepper
  • 1/2 tsp Worcestershire
  • 6-8 slices french bread, toasted
  • 1/3 cup Parmesan cheese, grated
  • 1/4 cup Gruyere or Swiss cheese, grated

Directions

  1. Use a heavy pan or Dutch oven to slowly saute onions in butter until gold brown, stirring often to prevent burning.

  2. Add stock, seasoning and Worcestershire.

  3. Bring to boil, reduce heat and simmer 30 minutes.

  4. To serve, place in ovenproof soup bowls.

  5. Sprinkle toasted bread with cheeses and broil until lightly browned.

  6. Place on top of soup to serve.
