Black Bean and Corn Salad

Ingredients

  • 1 can black beans (19 fl oz)
  • 1-1/2 cup corn kernels, frozen thawed or can
  • 1 small green pepper, diced
  • 1 small jalapeno pepper, minced
  • 1/3 cup red onion, diced
  • 1/3 cup green onion, chopped
  • 1/3 cup cilantro, chopped
  • 1/4 cup veg. oil
  • 2 Tbsp red wine vinegar
  • 1/2 tsp cumin
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 clove garlic, minced
  • 8 cherry tomatoes, halved

Directions

  1. In large bowl, combine corn, peppers, onions, cilantro and black beans.

  2. In small bowl, whisk together oil, vinegar, cumin, sugar, S&P and garlic; pour over bean mixture, tossing to coat.

  3. Refrigerate covered.

  4. Add tomatoes before serving.
