Pad Thai

Serves 4 people

Ingredients

  • 227 g wide rice noodles
  • 2 Tbsp oil
  • 6 oz. lean ground pork
  • 1 red pepper, sliced
  • 3 cloves garlic, minced
  • 1/4 tsp hot pepper flakes
  • 6 oz (175g) raw shrimp
  • 1/3 cup chicken stock
  • 3 Tbsp fish sauce
  • 2 Tbsp sugar
  • 2 Tbsp lime juice
  • 2 Tbsp ketchup
  • 1 egg
  • 2 cups bean sprouts
  • 2 green onion, chopped
  • 1/4 cup fresh coriander, chopped
  • 2 Tbsp peanuts, chopped

Directions

  1. Soak noodles in warm water 15 minutes and set aside.

  2. In wok, stir fry oil, pork, red pepper, garlic and hot pepper flakes 2 minutes.

  3. Add shrimp and stir fry 1 minute.

  4. Combine chicken stock, fish sauce, sugar, lime juice and ketchup.

  5. Stir into above ingredients and stir fry 1 minute.

  6. Add noodles and toss.

  7. Drizzle with egg, tossing until it sets.

  8. Add bean sprouts and toss.

  9. Sprinkle with green onion, coriander and peanuts.
