Turkey Barley

Ingredients

  • 2 turkey drumsticks
  • 2 Tbsp butter
  • 1 cup onion, chopped
  • 1/2 cup mushrooms, chopped
  • 1-1/2 cup barley
  • 3 cups chicken stock
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions

  1. Bake turkey and butter in large uncovered dutch oven for 45 minutes at 350 F and set aside.

  2. Add onion to oven and cook until tender.

  3. Stir in mushrooms and cook 3 minutes.

  4. Add barley and cook until golden, approx. 2 minutes.

  5. Add 1/2 of chicken stock and top with turkey.

  6. Cover and bake at 350 F for 30 minutes.

  7. Add remaining stock, cover and cook 30 minutes longer.
