Irish Stew

Ingredients

  • 2-1/2 lb mutton or lamb, diced
  • 7 large potatoes, cut into eights
  • 6 large carrots, sliced thickly
  • 1 spanish onion, diced
  • 1-1/2 cups water
  • 1-1/2 cups Guinness
  • 4 Tbsp HP Sauce
  • S&P

Directions

  1. Place meat in pot with a little oil and brown until tender.

  2. Add vegetables, water and Guinness and simmer until vegetables cooked and potatoes have slightly thickened the liquid.

  3. Add HP and S&P.

  4. Serve with Irish soda bread.
