Farm-Style Leek Soup

Ingredients

  • 2 large leeks, sliced
  • 2 medium onions, sliced
  • 1 clove garlic, minced
  • 1/4 cup butter
  • 4 cups chicken broth
  • 2 cups uncooked fine noodles
  • 1 bottle beer (12 oz)
  • 1-1/2 cup shredded semi soft cheese
  • S&P

Directions

  1. In large soup pot, cook leeks, onion and garlic in butter over low heat for about 15 minutes, stirring often.

  2. Add stock, cover and simmer for 30 minutes.

  3. Add noodles and simmer for 15 minutes longer.

  4. Add beer and heat to simmer.

  5. Add cheese to each serving.
