Blackening Seasoning

Ingredients

  • 2 tb Sweet paprika
  • 2 1/2 ts Salt (I usually use 30%-50% of this)
  • 1 ts Onion powder
  • 1 1/2 ts Garlic powder
  • 1 1/2 ts Cayenne pepper (I usually cut this quite a bit for my audience)
  • 2 ts Lemon pepper
  • 1 ts thyme
  • 1 1/2 ts basil

Directions

  1. For the

  2. fish, I usually melt some butter and mix it with olive oil (1 or 2: 1) in

  3. a plate. Coat the fish in the fat and coat liberally with the spice mix.

  4. Heat up a cast iron skillet/griddle for at least 10 minutes or so. Throw

  5. the fish on the skillet and stand back.
