Royal Purple Mashed Potatoes

Ingredients

  • 1 1/2 lb purple potatoes
  • 1/4 tsp dried thyme, crushed
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper
  • 3 tbsp milk

Directions

  1. Peel Potatoes, if desired, and quarter. Cook, covered, in a small amount of boiling water for 15 minutes or until tender; drain.

  2. Mash with a potato masher or fork. Add thyme, salt and pepper.

  3. Gradually, beat in milk to make light and fluffly, adding an extra tablespoon or two of milk, if necessary.
