Turkey and Black Bean Chili with Crackers

Ingredients

  • * 8 ounces turkey breast, ground
  • * 2 teaspoon olive oil, extra virgin
  • * 1/2 teaspoon black pepper
  • * 2 teaspoon garlic, chopped
  • * 1/2 cup onion, chopped
  • * 1/2 cup bell pepper, green, chopped
  • * 4 teaspoon jalapeno peppers, diced, canned
  • * 1/2 teaspoon chili powder
  • * 1/2 teaspoon cumin, ground
  • * 1/4 cup beef broth, low sodium
  • * 1/4 cup tomato sauce, no added salt
  • * 1 cup tomato, chopped
  • * 1 cup black beans
  • * 4 teaspoon cilantro, fresh
  • * 4 tablespoon onion, green, chopped
  • * 16 crackers, whole wheat

Directions

  1. Preparation

    • In a deep skillet or stew pot, brown ground turkey in oil over high heat. Add black pepper.
    • Reduce to medium heat when meat is browned and crumbled. Drain off grease.
    • Return meat to stove-top. Add garlic, onion, green peppers and jalapenos to meat. Add chili powder and cumin; mix thoroughly. Cook over medium heat for about 5 minutes or until vegetables are crisp.
    • Stir in broth, tomato sauce, tomatoes and black beans. Bring to a simmer, then reduce heat. Simmer for 20 minutes.
    • Remove chili from heat and stir in cilantro and green onions.
    • Serve with crackers on the side.
