Pasta with Prosciutto and Peas

Ingredients

  • Salt/pepper
  • 12 oz Fettuccine
  • 1 T butter
  • 1 large shallot, finely chopped (1/4 C)
  • 1/4 C heavy cream
  • 10 oz frozen peas
  • 4 oz prosciutto, halved & sliced (1 C)
  • 1 T finely grated lemon zest
  • 1 T fresh lemon juice
  • 1/2 C finely grated Parm + more for serving

Directions

  1. Cook pasta. Reserve 1 C of pasta water.

  2. In a large skillet, melt butter over medium-low heat, add the shallot and cook until softened, about 5 minutes.

  3. Add cream, peas, and prosciutto; bring to a gentle simmer over medium heat. Simmer until the peas are heated through, 3-4 minutes.

  4. Stir in the lemon zest & juice.

  5. Pour the sauce over the pasta; add the parm and season with salt & pepper.

  6. Add enough of the reserved water to thin sauce as desired.

  7. Serve!
