Blueberry Muffins

Ingredients

  • 2 cups sifted regular flour
  • 1/3 cup sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 egg, well beaten
  • 1 cup milk
  • 4 tbsp butter or margerine
  • 1 cup frozen unsweetened blueberries
  • 1 tbsp sugar
  • 1 tsp lemon rind

Directions

  1. Sift flour, the 1/3 c sugar, baking powder, and salt into a large bowl.

  2. Mix egg, milk, and butter/margerine in small bowl; add all at once to flour mixture.

  3. Stir lightly with a fork just until liquid is absorbed (batter will be lumpy)

  4. Fold in blueberries

  5. Spoon into greased, medium-sized muffin pan, filling each 2/3 full. Sprinkle with mixture of lemon rind and 1 tbsp sugar.

  6. Bake in hot oven – 425F – for 20 minutes or until golden. Serve hot.
