Cheese Eggplant Spread

  • 1/4 head of cabbage, chopped
  • 1 green pepper, chopped
  • 1/4 cup olive oil
  • 2 large eggplants, peeled and cubed
  • 1 cup toasted hazelnuts, chopped
  • 1 teaspoon salt or to taste
  • 1 cup grated mild cheddar cheese


  1. Saute the cabbage and green peppers in olive oil.

  2. Add the eggplant, salt, and hazelnuts. Cover and simmer gently until soft.

  3. Cool for a minute or two and crush slightly while mixing in the grated cheese.
