Meat Loaf

Serves 6 people

Ingredients

  • 1 egg
  • 1/2 cup dry breadcrumbs or oatmeal
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 lbs lean ground beef
  • 2 tsp veg or olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1/2 cup peas
  • 1/2 cup chili sauce

Directions

  1. eheat oven to 350.

  2. Combine egg, bread crumbs (or oatmeal), salt pepper and ground beef.

  3. In large skillet, saute carrots, peas and onions for until soft (about 3 minutes). Cool slightly and add to beef. Mix.

  4. Pack into 8×4 inch loaf pan.

  5. ke for 60 – 75 minutes or until meat thermometer read 170.

  6. Let stand for 5 minutes before serving
