Chicken meat loaf

Ingredients

  • 4 1/2 oz tomato paste
  • 1/4 cup dry red wine
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 1/4 tsp dried basil
  • 1/8 tsp cumin
  • 1/8 tsp paprika
  • 1/8 tsp dried oregano
  • 1/8 tsp salt
  • 3/4 lb grund chicken
  • 3/4 cup rolled oats
  • 1 large egg
  • 1/2 cup zucchini

Directions

  1. Preheat oven to 350F.

  2. Combine tomato paste, wine, water, garlic, basil, cumin, paprika, oregano and salt in small saucepan. Bring to a boil then reduce heat to low. Simmer, uncovered, for 15 mins. Set aside.

  3. Combine ground chicken, oats, egg, zucchini and 1/4 cup tomato mixture in a large bowl. Mix well. Shape into a loaf and place in an ungreased loaf pan.

  4. Bake for 45 mins and discard drippings.

  5. Pour 1/4 cup of remaining tomato mixture over the top and bake for 15 mins longer.

  6. Transfer to platter, let cool 10 mins before slicing.
